In this yellow garri recipe, I will share with you how to make yellow garri/eba using white garri.
Eba is a type of food commonly eaten with different types of soups in Nigeria. Instead of eba, many people also call this food Garri in relations with the main ingredient used for its preparation.
Garri is one of the major foods gotten from processing cassava tubers and to know more about how garri is produced I would suggest you read more here .
For more clarification, I would like to explain further on the different types of eba or garri as I would be using both names interchangeably in this recipe.
Types of garri.
As stated earlier, there are different types of garri. The difference in the garri is categorised using various parameters such as sourness, smoothness and colour.
For this recipe, I will be focusing more on the types of garri according to their colour.
- White garri : This is the most commonly consumed type of garri. It retains the main white colour of the cassava tubers used for processing. So when this white garri is used for cooking ,its outcome is white eba. The picture of this type of garri is attached above.
- Yellow garri : Although cassava tubers are white but a different processing technique can result into yellow garri. When this type of garri is used for cooking, its result is yellow eba.
With this knowledge of the different types of garri, I would like to show you a cooking hack on how to make yellow eba/garri with white garri.
The reason for the need of this recipe is because of the scarcity of yellow garri in some locations especially outside Nigeria.
Many Nigerians who live outside Nigeria have to deny themselves the satisfaction of enjoying yellow eba because many African food stores abroad do not stock yellow garri.
This is because yellow garri has a short shelf life when compared with white garri which has a long shelf life. Also it is more expensive than white garri.
Moving forward, I write to show you how to use white garri to make yellow eba with these ingredients.
Eba Ingredients
- white garri
- 1 tablespoon palm oil
- water
As I continue I would like to suggest that you visit your native food store to shop a wide array to Nigerian foods and ingredients.
Going further, I will proceed to share with you how to make yellow eba with white garri.
How to make yellow garri with white garri.
- Pour the required quantity of water in a pot
- Set your cooker to high heat
- Place the pot on the cooker and allow the water boil
- Add palm oil to the boiling water then continue to allow the water boil for 2 to 3 more minutes
- After that, turn down the heat of the cooker to low
- Get your turning stick also known as wooden spatula or omorogun
- Pour the white into the oily water and mix gradually
- Continue to add more garri till the eba thickens well to your preference.
- Yellow eba is ready to be enjoyed with your favourite Nigerian soup.

- eba and efo riro
- eba and egusi soup
- eba and stew with ewedu
- Okro soup with garri and many more.
