
Tripe is the edible lining of the stomach of cattle or sheep.
Although it is a popular delicacy in many parts of the world, it requires a certain expertise to cook.
As I continue to write about how to proper cook tripe, I would like to give a brief introduction of shaki.
The English name for Nigerian shaki meat is tripe and it is also commonly enjoyed in different parts of the world as stated earlier.
For instance, Spanish people call it menudo while Africans from other parts of the Africa call it mogodu and many other different names.
Firstly, before tripe can be cooked , it must be cleaned to remove the black covering.
So, I will proceed to give a step-by-step description on how to clean tripe.
How to clean tripe.
- Put the tripe in a big bowl
- Boil enough water to cover it
- Pour the hot water on the tripe
- Scrape off the black covering with a knife
- Do this until the tripe is clean just as shown in the picture below.

After cleaning the shaki, then it can be cooked with the ingredients listed below.
Ingredients
- 8 pieces of tripe
- 2 garlic
- 2 onions – medium size or 1/2 cup onions paste
- 2 seasoning cubes
- 1 tablespoon mixed herbs – contains parsley, marjoram, basil, thyme,oregano
- 1 tablespoon salt
- 1/2 tablespoon curry powder
- 1 tablespoon ginger powder
Kindly note that garlic and ginger are used to cook tripe to improve the taste and to also help soften it fast because it takes long to soften well.
So, here is how to use these ingredients to cook tripe.
How to cook tripe.
Tripe can be hard to cook but it can be a delicious when cooked the right way.
- Put the cleaned tripe in a pot
- Peel and dice the garlic with a knife or crush with a garlic crusher
- Slice and add onions or onions paste
- Season the tripe with stock cubes, salt, mixed herbs, curry powder and ginger powder.
- Add 2 cups of water
- Mix well and cook for 20 minutes on high heat
- Taste the tripe after 20 minutes to confirm its softness.
- Add more water in little quantity and cook till tripe is soft enough
- As soon as it is soft enough to your preference than it is ready to be cooked.

You should try this tripe recipe because it can be added to a wide variety of Nigerian foods and soups.
