There are many okra recipes, but in this blog post I will share with you how to use two different types of okra to make delicious Nigerian okra soup.

First, below is a summarised detail about okra that you would like to know.

Okra

Okra is a green oblong or oval vegetable commonly used for cooking in many parts of Africa and all over the world.

In West Africa, Okro is majorly used to cook a slimy richly delicious soup called okra soup.

In Yoruba language , okro is called ila. Just like ogbono soup, okro soup is also called draw soup because of its slimy texture.

For proper perspective, okro is also called okra so for this recipe, I will be using both names interchangeably.

Now I will proceed to writing the list of ingredients to be used to okro soup.

Okro Soup Ingredients

  • 3 cups okra ( ila oko)
  • 2 cups okro
  • 1 mackerel fish
  • 4 smoked hake fish (panla egun)
  • 5 dried fishes ( any dried fish of your choice)
  • stockfish
  • 2 tbsp crayfish
  • 1/2 tbsp salt
  • 1/2 tbsp seasoning powder
  • 21/2 tbsp chilli pepper powder
  • 1/4 palm oil

Okro Soup Preparation

  • Slice and clean the mackerel fish, ensure the gut and intestine is removed
  • Also clean the smoked hake fish with water, remember to remove the bones and fish head.
  • Clean the two types of okro separately
  • Blend the ila oko with a blender and set aside
  • Slice the long okro and also set aside
  • Set your cooker to medium heat
  • Place a clean pot on the cooker
  • Add 3-4 cups of water depending on the thickness you wish to achieve
  • Into the pot of water, put all the fishes
  • Season with salt, seasoning, crayfish and chill pepper.
  • Cover the pot and cook for 20 minutes
  • After 20 minutes add the blended and sliced okra
  • Mix well and add palm oil
  • Do not cover the pot any more
  • Cook for about 15 minutes on medium heat

Delicious okra soup is ready to be enjoyed with your favourite Nigerian swallow of choice.

Please note that as seen in the cooking preparation above, you have to be absolutely sure that you are cooking with authentic unadulterated palm oil before adding the palm oil last.

If you are Not certain about the originality of your palm oil, I will suggest that you add the palm oil with the fish and cook together first before adding the okro.

This is because adulterated palm oil can change the taste of you soup thereby making it less desirable.

So, to avoid an undesirable taste in you soup, try to buy palm oil from a trusted food vendor.
