Yoruba cuisine has some amazing corn recipes. Today I am super excited to share a delicious Yoruba dish made with corn. Trust me you’ll want to add this to your recipe book!
The name of this dish is Ogi eda. It is also known as eko eda and can be called corn grits pudding in English language.
This is a traditional dish enjoyed by people from kwara and Ilorin area is quite easy to make.
Whilst it’s called ogi eda or eko eda, this pudding is different from eko jije / agidi or ogi which is also known as akamu.
There are two (2) methods of making this pudding and all the ingredients are listed below
Ingredients
- Dry corn
- Sugar
- Salt
- Lots of water

Making eko eda at home (1st method).
This first method is known as the fermentation method and here is a step-by-step process of how to make this delicious pudding.
- Get dry corn – make sure the corn is very dry
- Pick out chaffs, stones or dirt
- Grind dry corn to a rough texture and ensure it is not too smooth and not too rough. The reason will be stated below.
- Pour it into a big bowl
- Add a lot of water then and use a spatula to mix it
- You will notice the chaff and dirt float to the top.
- Use a fine mesh sieve to scoop all the chaff and other substances that float to the top. Do this until it is clean.
- Transfer into a big bowl with lid.
- Add enough water to cover the corn meal.
- Set aside, allow to soak for 1-2 days or 3 days depending on how sour you want it to be.
- After 1-3 days taste the water used for soaking to confirm its sourness
- Remove the water
- Place pot on the cooker
- Pour some water into the pot
- Add sugar and little salt (optional)
- Put the sour, soften cornmeal in the pot
- Cook till 20-30 mins till it thickens.
- Ogi eda is ready to be served with milk.
Before sharing the second method, it is important to state that either yellow or white corn is good for this dish.

How to make ogi eda (2nd method)
This method is really quick and straight forward. You will discover why soon.
- Get dry corn, either yellow corn or white corn can be used.
- Peel the corn just as it is done for egbo recipe
- Grind the peeled corn to a semi-smooth texture (check below for the reason)
- Rinse in water multiple times
- Fill cooking pot with some water
- Add sugar to achieve preferred sweetness
- Add a little salt, optional but nice.
- Pour coarse cornmeal into the pot
- Cook until preferred softness is achieved.

Corn pudding is ready! To make it creamy add milk.
Sweeten with sugar, sweeteners, honey or fresh fruits..
For a crunchy feel in the mouth, add peanuts / groundnut, almond or any nut of choice.

Here is the reason why ensuring that the corn must be grinded to the right texture which is not to smooth and not too coarse.
If the corn is to rough after grinding, it may take a very long time to cook.
Also, when the corn is grinded too smoothly, when cooked the outcome would be tuwo swallow instead of ogi eda pudding.
