There are different corned beef recipes all over the world. In this article, I will share with you the cooking instructions you need on how to make corned beef and rice.
Nigerians eat rice a lot. As a result of this, there are so many Nigerian rice dishes such a lot of people that rice actually think rice is a traditional Nigerian food.
Here is a list of some common rice dishes in Nigeria.
- Jollof Rice Without Tomato Paste
- White rice and stew
- Palm oil rice/ Native rice
- Fried rice
- Ofada rice
It would surprise you that Nigerians also make rice into pudding such as Tuwo shinkafa da kwakwa and also into swallow form to be enjoyed with soup.
To make cooking easy, rice is blended into flour form, then cooked till it thickens just like tuwo Shinkafa.
The rice flour can also be mixed with another type of flour such as cassava flour to make rice poundo.
As stated earlier, rice can be cooked with a wide variety of ingredients which includes corned beef.
Corned beef
Corned beef is basically beef that is has been brined in salt and spices.
For better perspective, fresh corned beef is called salt beef while the canned ones which are more popular in Nigeria are called corned beef.
Corned beef is high in protein, vitamin B12 and Iron. You should also note that it has high salt content and fat.
So when cooking with corned beef, the salt added to the food should be reduced in order to avoid having salty food.
As I continue, I will first list the ingredient needed to make corned beef rice and then I will proceed to the preparations and cooking instructions.
Ingredients for corned beef and rice.
- 3.5 cups rice
- 1 red long pepper
- 1 onions
- 3 garlic
- 1 tablespoon scotch bonnet pepper
- 1 red bell pepper
- 1 yellow bell pepper
- 1 green bell pepper
- 1 orange bell pepper
- 340g corned beef
- 1 tablespoon dried thyme
- 0.5 tablespoon curry powder
- 1.5 tablespoons seasoning
- 0.5 tablespoon salt
- 125ml cooking oil
- 3 bay leaves
- 2 tablespoons ginger
Preparing the ingredients.
- Peel the onion and garlic and blend with little water
- Clean the red long pepper and all the bell peppers
- Blend the red long pepper with the red bell pepper and set aside
- Slice the yellow, orange and green bell peppers separately or in the same bowl depending on your choice.
- Wash the rice with water only
- Pour the cleaned rice in a pot
- Add enough water to the pot of rice
- Cover and parboil for 5 to 7 minutes
- Place a colander or basket in the sink
- After 7 minutes, drain the rice water by pouring it into a basket.
- Allow to drain.
The cooking process will be very easy and straightforward because all the ingredients are prepped and ready to be cooked.

How to make corned beef and rice
Listed below are the cooking instructions you need to make corned beef on rice.
- Place a clean pot on your cooker set on medium heat.
- Pour cooking oil into the pot
- Allow cooking oil to get hot
- Add the garlic and onion paste made earlier to the hot oil.
- Fry for about 1 minute
- Add ginger, blended red peppers and scotch bonnet pepper.
- Mix well to combine
- Add the cooking spices such as curry powder, bay leaves, dried thyme and half tablespoon seasoning powder
- Stir well
- Put the corned beef and break to mix well with pepper sauce
- Add some salt and a portion of the green, yellow and orange bell peppers.
- Pour the parboiled rice into the sauce
- Stir very well to ensure that the parboiled rice and the sauce are properly mixed
- Add 1 to 2 cups of water, the remaining bell peppers and seasoning powder.
- Cover the pot and cook for 7 to 10 minutes or till rice is soft enough to your preferred taste.
Corned beef rice is ready.
You can also choose to enjoy this corned beef rice dish with any protein of your choice.
