Puff puff is a well loved pastry. It is sold by street food vendors, included in party menu as a favourite and also enjoyed as a lazy day at home relaxation snack.
This puff puff recipe has a unique twist that makes it more delicious, the ingredients needed are listed below.
Ingredients
- 5 overripe bananas
- 14g instant yeast
- 3 cups water
- 5.5 cups all purpose flour
- 1 teaspoon salt
- 6 tablespoons sugar
- cooking oil
How to make banana puff puff pastry.
For this recipe, we’ll start by activating the yeast to make this pastry. To do this;
- Pour 1/2 tbsp sugar into 1 cup of lukewarm water
- Add 14g yeast and mix well
- Set aside, cover and allow the yeast to activate for 10 minutes
- Peel all the bananas
- Put everything in a food processor and blend
- Pour the activated yeast into the food processor with the blended banana
- Add flour, salt and sugar
- Thoroughly mix with the food processor
- Transfer the dough into a mixing bowl
- Cover and allow to rise for 45 minutes
- To fry the puff puff batter, put a deep frying pan on the cooking
- Fill it with a lot of cooking oil
- Allow cooking oil heat up well
- Test the hotness by dropping a small batter in the oil
- Watch to see that it floats immediately – but if it doesn’t float immediately, that means the oil is not hot enough
- Now drop the batter in the hot oil in small ball
- Be careful not to overcrowd the pan
- Reduce cooking heat to allow the pastry fry well from inside out.
- After 2-3 minutes turn the puff puff to allow the other side fry well
- Till it is golden brown
- Place kitchen paper towel in a colander to absorb excess oil
- Scoop the pastry out of the hot oil
- Put it in the colander
- Repeat the process until all the pastry has been fried.
Delicious banana puff puff is ready.
