There is lack of access to mushroom because it is highly perishable and many farmers don’t see it commercially viable so they don’t engage in planting it for commercial purposes.
Typically in village settings, mushrooms grow on their own along bush paths or on farmlands and farmers harvest them to be cooked later in the day for lunch in the farm or for dinner.

For an absolutely delicious sauce, the chicken must be cooked to perfction with aromatics and spices.
As a result, the first list of ingredients would be all you need to make delicious chicken.
Ingredients for cooking chicken & how to cook chicken
- 1kg chicken
- 1 tbsp curry
- 1 tbsp thyme
- 2 stock cubes
- 1 medium size onions
- 3 bay leaves
- 1 chilli pepper (optional)
- 1 tbsp ginger & garlic paste
- 1 tbsp salt
- 3 cups water
Now lets make sumptious chicken with all the ingredients listed above.
First clean the chicken throughly in water using a knife to scrape off the dead skin and chicken feathers.
Transfer it into a pot, peel and slice onions into the pot.
Add curry, thyme,salt, stock cubes, chili pepper, bay leaves and ginger and garlic paste.
Add water, mix well to combine and cook for 25 minutes on high heat.
After 25 minutes, separate the chicken from the stock. Transfer the cooked chicken into a colander to drain excess liquid. Also, keep the chicken stock for later.
Chicken is ready, let’s proceed to prepare spicy mushroom sauce with eggs and the other ingredients listed below.
Ingredients for mushroom sauce
- 1kg mushrooms
- 2 scotch bonnet peppers
- 1 green bell pepper
- 1 yellow bell pepper
- 1 orange bell pepper
- 3 red bell pepper
- 1 red long pepper
- 2 onions
- 5 tomatoes
- 4 eggs
- boiled chicken
- 1 cup chicken stock
- 2 seasoning cubes
- 0.5 tablespoon salt
- 0.5 tablespoon curry powder
- 0.5 tablespoon dried thyme
- 2 cups cooking oil

Spicy mushroom sauce with eggs and chicken step by step process
- Put raw eggs into a pot of water
- Boil for 20 minutes till eggs are hard boiled
- Allow the boiled eggs to cool down then peel off shell
- Set Boiled eggs aside
- Peel the skin of the onions
- Clean the tomatoes, peppers and onions
- Blend the tomatoes, 1½ red bell peppers, onions, scotch bonnet peppers, and red long pepper
- Slice onions, yellow and green bell peppers to your preferred sizes
- Clean the mushrooms with running clean water
- Cut the cleaned mushrooms and set aside
- Set the cooker to high heat
- Place your frying pan on the cooking and add your preferred cooking oil
- Allow the cooking oil heat up well for few minutes
- Fry the boiled chicken in the hot oil till it is it turns to a nice shade of golden brown
- Remove the fried chicken from the hot oil

- Reduce the cooking oil by half or more depending on your preference
- Add onions to the hot oil
- Mix and allow to fry for up to two minutes
- Add the blended tomatoes and pepper
- For good taste, season with chicken stock, seasoning cubes, salt, curry powder and dried thyme.
- Mix well and then add the boiled eggs and fried chicken
- Cook on high heat till the liquid in sauce dries and the sauce thickens
- When the sauce thickens, it is time to add the slices mushrooms
- Cook for 10 minutes
- Add the sliced coloured bell peppers
- Mix well and cook for 3-5more minutes

Tips for spicy mushroom sauce cooking
- This recipe is great with most types of mushroom.
- Scotch bonnets peppers are responsible for making the sauce spicy, so use more or less but try to stay within your spice level tolerance.
- After adding the mushrooms to the sauce, leave the pot open the reason for this is to avoid having a watery mushroom sauce.
