How to Make Spicy Fried Plantain

  • Peel the plantain by cutting off the top and bottom.
  • Then run your knife in a straight line from the top to the bottom.
  • Lightly peer the plantain open through the cut line to expose the edible part.
  • Repeat the first three process outlined above till all the plantains have been peeled.
  • Slice into big pieces as can be seen in the image below

For this snack when you cut it big, it would shrink in size and become small after frying. So I would advice that you cut it in big chunks.

Back to the preparation;

  • Sprinkle your preferred choice of pepper – I used Cameroon pepper for its unique taste and flavor.
  • Ensure the pepper coats all the plantain slices by tossing them up and down for 30 seconds.
  • Alternatively, gently mix with your hands.
  • Set aside and clean the work surface.
  • Pour vegetable oil into your frying pan.
  • Allow the oil heat up for 2-4minutes.
  • Arrange the spiced plantain slices in the hot oil.
  • Fry until slight browning is noticed on the side in the oil.
  • Turn the browned ones while the others that are not yet brown are allowed to continue frying.
  • After turning, fry the second side for 30-45 seconds
  • Proceed to scoop them out of the oil onto a kitchen towel paper to absorb the excess oil while you allow the others fry too.
  • Repeat the frying process till everything has been fried.
