
Welcome to my blog, today I share with you how to make sorghum swallow.
This food has become popular because more Nigerians continue to embrace healthier options of swallow meals for dinner, hence the use of sorghum.
Sorghum swallow is an innovative Nigerian swallow enjoyed as a substitute for Nigeria’s carbohydrate rich swallow foods such as pounded yam, fufu, semovita and many more.
This meal is easy to make and you only need two (2) ingredients.
Ingredients for sorghum swallow
- Red sorghum grains
- Water

How to make sorghum swallow
- Pour the sorghum grains in a big tray
- Remove the stones – most locally processed sorghum grains have stones and dirt because of the dried process
- Toss the grains up and down and blow off the shells of the sorghum
- Grind the grains to powder/flour
- Sieve the flour with a thin mesh to remove lumps or grains that were not well grinded
- Place a pot on the cooker
- Add enough water to make the quantity of swallow in mind – to get the quantity right, you may want to start small first.
- Cover the pot and allow the water boil
- Turn down the cooking heat when the water starts boiling
- Get omorogun also known as turning stick or wooden spatula in english
- Gently pour the sorghum flour into the hot water while mixing immediately
- At the initial stage, what looks like lumps may begin to appear but continue mixing and adding more flour.
- Do this till the required thickness is achieved just like in the video attached below.
- Put the serving spoon into a bowl of water
- Use the spoon to scrape the swallow attached to the omorogun into the pot
- Also use the spoon to push down the swallow on the sides of the pot into the pot
- Add about 1/4 to 1 cup of water to the sides to the swallow – depending on the quantity of swallow made and how soft you want it to be .
- Gently lift it up on the sides so that the water will get to the bottom of the pot
- Cover the pot and cook for 2-3 minutes on low heat
- After 2 minutes, mix the swallow very well till it becomes silky.
Sorghum swallow is ready to be enjoyed with any soup of your choice.

It is advisable that this swallow is enjoyed hot as it may continue to thicken as it gets cold.
