Slightly spicy and delicious, perfect for eating rice, pasta, potato and yam.

Red onions sauce ingredients
- Onions – 15 medium size
- Bleached palm oil – 1/4 cup
- Palm oil – 1/4 cup
- Egg – 4 -5
- Fish – 2 Mackerel fish
- Bell pepper – 1 large one
- Sweet red pepper – 1 large one
- Garlic – 5 pcs
- Ginger
- Dry thyme – 1 tbsp
- Curry powder – 1 tbsp
- Stock cubes – 2 small cubes
- Salt to taste – 1/2 tbsp

How to make onions sauce
Below is the preparation process of making homemade onions sauce in your kitchen.
- Boil eggs till they are hard boiled then peel the eggs to remove the shells.
- Thoroughly clean mackerel fish with the steps here.
- Boil the fish or fry it nicely – I have a fried fish recipe for you
- First peel off the skin of all the onions
- Slice 2-3 onions – this step is optional
- Blend the remaining onions with some water to make onions paste.
- Clean bell pepper, sweet long pepper, ginger and garlic
- Make pepper mix by blending everything to a rough texture.
- Heat up bleached palm oil and red palm oil together in a pot.
- Fry sliced onions in the hot oil for 2-3 minutes – skip this step if you don’t like to see onions in your food.
- Scoop the fried onions out of the hot oil
- Add pepper mix
- To improve taste, season with dry thyme, salt, stock cubes and curry.
- Mix well to combine and allow to fry for 10 mins on medium heat
- After 10 mins of frying, the sauce would look drier as there has been a significant reduction of the liquid content in the pepper mix.
- Pour the onion paste into the sauce
- Add boiled eggs and fried fish
- Cover and cook for 20 mins on medium heat
- Stir well to ensure the sauce doesn’t burn or get stuck to the bottom of the pot.
- Stir the fried onions into the sauce and allow to fry 5 minutes

Kindly note that you can use and protein of choice for this sauce.
It is also delicious with any type of fish, chicken, beef, turkey, ponmo.
