simple Nigerian fried rice

This is a recipe on how to make simple Nigerian fried rice. In this blog, you will learn how to cook fried rice to perfection with fish.

You will love the entire cooking process but all you have to do is to trust the process because of its uniqueness as well as its beginners-friendly nature.

In the Nigerian culture, there are different recipes made with rice and I would like to introduce this game changer fried rice with fish.

Without taking too much of your time, I will go ahead to list the ingredients needed.

Nigerian fried rice ingredients list

  • 2 1/2 cups basmati rice
  • 2 spring onions
  • 2 cups mixed veggies
  • 1/2 tablespoon salt
  • 2 1/2 tablespoon dried thyme
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 1 mackerel fish (cooked)
  • 4 tablespoons curry powder
  • 1/2 tablespoon nutmeg
  • 1/2 tablespoon turmeric powder
  • 1/2 chilli pepper powder (optional)
  • 3 stock cubes
  • 1/2 cooking oil

How To Make Fried Rice With Fish

  • Clean and ensure the fish well seasoned before cooking using the step here
  • Remove all the bones in the fish
  • Then lightly shred it with your fingers and set aside
  • Wash rice till water is clear
  • Parboil the cleaned rice for 10 minutes
  • After 8 minutes, Pour into a basket or colander to sieve out the rice water
  • Add cold water to cool the rice.
  • Clean and slice the spring onions and all the peppers
  • Heat up the cooking oil for 1-2minutes
  • Stir fry spring onions for 1 minutes
  • Add dried thyme, bell pepper and mix well
  • Add shredded fish, curry powder, nutmeg, salt, stock cubes, chilli pepper (optional) and turmeric powder.
  • Fry on medium heat 2 minutes on medium heat
  • Add mixed veggies, combine well
  • Cover the pot and allow to cook for 2 minutes on medium heat.
  • Pour the Parboiled rice
  • Stir very well till everything is well combined.
  • Taste the rice to confirm if there is any need further seasoning.
  • Add 1 cup of water
  • Cover the pot and cook for 10 minutes on low heat.
  • Add more bell pepper and mixed veggies
  • Steam for 2 more minutes

Fish fried rice is ready to be enjoyed .

Serve with your favourite protein such as fish, turkey, beef , chicken and many more.

One major cooking tip for this recipe is to ensure to properly combine the rice well with the ingredients.

When the food is properly mixed , it will taste better and this will stop most of the ingredients from getting burnt at the bottom of the pot.

Also, it is important to state that the quantity cooked should be what you can finish immediately.
