Firstly, I will list the ewa agoyin sauce ingredients and ewa agoyin beans ingredients.

Ewa Agoyin Sauce Ingredients

  • 1 cup Agoyin sauce mix
  • 3 cups water
  • 3 Onions
  • 1 1/2 cup bleached palm oil
  • 1/2 cup Palm oil
  • 1 teaspoon salt
  • 3 Stock cubes

Ewa Agoyin Ingredients

  • 2Brown beans
  • Water
  • 1 1/2 tsp salt
  • 1 tsp sugar ( optional)

The above, is a picture one of the types of Nigerian beans used for this recipe. It is called oloyin beans.

Another type of brown beans that can be used is olotu beans. This beans has a slightly darker colour when compared to oloyin beans.

How To Make Ewa Agoyin Stew

This beans dish is not complete without this signature sauce. Ewa agoyin sauce is also known as agoyin stew.

I will be using Agoyin pepper mix from this shop for this recipe but you can also make this sauce from scratch as I did in my previous recipe here.

I will go ahead to write about how to make ewa agoyin stew.

  • Pour 1 cup of agoyin pepper mix into a bowl
  • Pour 2-3 cups of water into the bowl
  • Mix well to combine
  • Set aside
  • Peel and slice onions
  • Or blend onions to a paste (optional)
  • Place a clean pot on the cooker
  • Pour the palm oil and bleached palm oil into the pot
  • Heat up well
  • Fry the sliced onions/onions paste or both in the hot oil till it look semi-dried.
  • Transfer the prepared agoyin mix into the hot oil
  • Season with salt and stock cubes
  • Mix very well to combine
  • Fry very well on medium heat for 20 -30 minutes or till the sauce is dry.
  • Ewa agoyin sauce is ready.

While the sauce cools down, I will proceed with the details to how to make ewa agoyin with the ingredients which would be listed below.

How To Cook Ewa Agoyin

  • Sort through the beans to remove any chaff , stone or dirt.
  • Clean sorted beans twice with only water and then set aside
  • Pour water into a pot
  • Add the cleaned beans and boil for 7 minutes or till it begins to boil if you are cooking in a bigger quantity
  • Place a basket in the kitchen sink the pour the boiled beans into it to drain the water
  • After draining the beans water, pour the beans back into the pot
  • Add 2 1/2 cups of water
  • Cook till it is very soft.
  • Ensure you taste it at regular intervals to confirm its softness.
  • Mash the beans very well just as can be seen in the video.
  • Ewa agoyin is ready to be enjoyed.
