
I was planning to cook a proper Nigerian stew then I realised that the fish , beef and chicken were still frozen as I had forgotten to defrost them.
Then I remembered this delicious fried pepper stew that combines well with different foods. So, I decided to make this fried pepper stew the street food way.
It tasted so delicious and I want to share with you, this authentic Nigerian fired pepper stew you would ever try.
Just like the one sold on the street with fried yam or fried potato, this is a step-by-step recipe on how to make fried pepper stew the street food way.

Ingredients for fried pepper stew.
- 1 bell pepper
- 5 tomatoes
- 2 onions
- 1 tbsp dried thyme
- 1/4 cup cooking oil
- 1 red long pepper
- 1/2 tsp salt
- 1 stock cube
- 1 scotch bonnet pepper (optional)
As stated above, scotch bonnet pepper is optional, also one (1) bell pepper can be replaced with half half bell pepper.

How to fry pepper stew
- Peel off the skin of one of the onions, slice it and set it aside.
- Clean the tomatoes, peppers and the remain one onion.
- Make pepper mix by blending the onion, peppers and tomatoes to a rough texture.
- Heat up 1/4 cup of cooking oil for 1-2 minutes
- Improve the flavour of the cooking oil by frying the sliced onions for 2 minutes on medium heat
- Add 1 tbsp dried thyme
- Stir well and fry for 2 minutes
- Pour the pepper mix into the hot oil
- Season well by adding1 stock cube and 1/2 tsp salt for taste.
- Mix well
- Cover the pot or frying pan
- Cook for 10-15 minutes on high heat.
- Open the lid of the pot
- Stir well
- Allow to fry for extra 5 minutes on medium heat with the pot open.
Delicious fried pepper stew is ready to be eaten with any food of your choice.
