To start, the ingredients needed are listed below. So let’s take it step-by-step so you can get it perfectly
Sardines Jollof Rice Ingredients
- 2 1/2 cup basmati rice
- 2 sardines in a can
- 1/4 cup tomato paste
- 1/4 cup cooking oil
- 1 tsp salt
- 1 stock cube or 2 small cubes
- 2 sweet long peppers
- 1 bell pepper
- 1/2 tbsp salt
- 4 tomatoes
- 4 onions – small size
- 1 tbsp dry thyme
- 1 tbsp curry powder
- 2 bay leaves
How to cook jollof rice with the ingredients listed
I’ll start with the stew base first.
- Wash basmati rice with water multiple times.
- Pour washed rice in a basket to drain water used for cleaning.
- Peel off the skin of the onions
- Clean tomatoes, bell peppers, scotch bonnet pepper, sweet long peppers and onions with water.
- Slice one onions
- Blend peppers, onions and tomatoes to a rough texture.
- Heat up cooking oil
- Fry the sliced onions in hot oil for 2 minutes on medium heat
- Add dry thyme , curry powder and bay leaves..
- Mix well and fry for 2 minutes.
- Add tomato paste, stir well to combine and fry for 5 minutes on low heat
- Open the sardines in the can, pour the fish into the sauce.
- Steam with the sauce for 2 minutes in low heat.
- Remove the some of the fish and add the pepper mix.
- Season with 1/2 tbsp salt, 1 tsp salt and 1 large flat stock cube
- Combine the fried tomato paste with the pepper mix
- Allow to fry for 15 minutes on medium heat
Remember to fry well because if you skip or rush this stage, the jollof will taste raw or sour. So, take your time because the stew must be cooked.
- After the stew base has been properly fried and the oil floats to that top, it is time for the next step.
- Pour washed rice into stew base
- Mix well to combine so that the stew base coats the rice properly.
- Add 2 1/2 cups of water
- Stir well, cover the pot with aluminium foil or baking sheet to keep the heat in the pot.
- Cook for 15 minutes on medium heat
- Check the rice by tasting it and then lift it on the side to check there is enough liquid to cook it through.
- Add more water in really small quantities to the sides of the rice.
- Cover with aluminium foil or baking sheet then place the cover of the pot on it.
- Reduce the cooking heat to low to allow the steam cook the rice well
- Repeat the process till rice is cooked till 95%
- Mix gently to move the rice from underneath on top and vice versa – don’t rush the process, patience is key here.
- Put the sardines back on the rice, turn off the coking heat completely
- Allow the jollof rice steam for 10-20 minutes or till rice is thoroughly cooked.
