  • 1 tsp ginger powder
  • 1 tsp garlic powder
  • 1 stock cube
  • 1tsp dried thyme

Firstly, it is essential to state that fried fish could be replaced with any protein of choice.

Also, ginger paste, garlic paste and chilli paste can be used instead of the powder form used in this recipe.

How to revamp leftover stew.

Now I will proceed with the step-by-step process of how to make your leftover stew more delicious.

  • Peel off the onion skin and slice the fresh onion.
  • Pour 1/4 cup palm oil into a pot.
  • Allow oil heat up for 2 minutes.
  • Add sliced onions and fry for 2 minutes.
  • After 2 minutes add 1 tbsp iru.
  • Mix well, turn the heat down and allow to fry for 5 minutes.
  • Then add 1/4 cup tomato paste.
  • Combine the tomato paste well with the palm oil and the other ingredients by mixing very well.
  • Allow to fry for 6mins on medium heat.
  • Ensure to stir occasionally.
  • After this, add frozen leftover stew.
  • Cover the pot, turn the heat down to allow the stew defrost completely.
  • As soon as the stew is defrosted, add 2 cups water or more depending on your choice.
  • Also add salt, chilli pepper, garlic powder, ginger powder, dried thyme and stock cube.
  • Mix everything together
  • Put the fried fish and or any protein of choice that has already been cooked.
  • Mix well, cover the pot
  • Allow to cook for 20 mins on medium heat.
  • After 20 minutes of cooking, the entire kitchen would be bursting with delicious aroma.

Just like that leftover stew has been revamped for a better taste and flavour.
