  • 1-2 Horse mackerel fish
  • 1 bell pepper
  • 2 onions
  • 1 scotch bonnet pepper
  • 2 cups cooking oil
  • 1 stock cube
  • 1 tsp salt
  • 1/2 tbsp thyme
  • 1/2 tbsp curry powder
  • 1 tsp garlic powder
  • 1 tsp ginger powder

How to Make Lettuce Stir-Fry

For the perfection of this dish, the fish must be fried and then cooked properly.

  • Cut mackerel into small pieces, remove the fish head.
  • Transfer fish into a bowl of clean water

  • Add 1 tsp salt to the clean fish

  • Slice and transfer into a colander to drain excess water.
  • Peel off onions skin, clean in water alongside the peppers.
  • Blend to a rough texture and set aside
  • Heat up 1/3 cup cooking oil or 4 tbsp cooking oil in a frying pan or pot
  • Season the oil with thyme, curry, ginger and garlic powder.
  • Mix well to combine then fry for 2 minutes on low heat
  • Add pepper mix
  • Season with stock cube and salt
  • Add fried fish and cook for 15 mins or until liquid dried well.
  • Pour sliced lettuce into the sauce
  • Stir-fry on medium heat for 5-6 mins
