In this recipe, I am frying eggs with vegetables which makes it a perfect way to include vegetables in our diet and it is also an amazing way to encourage children to eat vegetables.

Nigerian fried eggs is also known as scrambled eggs.

To make fried eggs, the following ingredients are needed.

  • 4 eggs
  • 1/3 cup cooking oil
  • 2 tomatoes
  • 1 onion ( medium sized)
  • 1 cayenne pepper or 1/2 scotch bonnet pepper
  • fresh thyme
  • 1/2 tsp salt
  • 1 stock cube
  • 1/2 red bell pepper
  • 1/2 yellow bell pepper
  • 1/2 green bell pepper

Cayenne pepper was used to replace scotch bonnet pepper because it is a less spicy option.

Spicy food lovers can still use scotch bonnet pepper.

How to make Nigerian Scrambled eggs

This is how to make scrambled eggs in Nigeria with vegetables, all you have to do is to trust the process to be outlined in the steps below.

  • Peel off the skin of the onion.
  • Put the onion, tomatoes and pepper in a bowl of water.
  • Clean everything thoroughly, then put in all in a separate bowl.
  • Chop the tomatoes, onions and cayenne pepper or scotch bonnet pepper.
  • Neatly put everything ina bowl and set aside.
  • Chop the bell peppers separately and scoop into another bowl.
  • Place a clean pan on the cooker.
  • Pour 1/3 cup cooking oil into the pan then allow it heat up for 1-2 minutes.
  • Transfer the chopped tomatoes, onions and pepper into the pot.
  • Stir well to combine, cover the pot and fry for 5 minutes on medium heat.
  • After 5 minutes stir it well so that the sauce doesn’t burn.
  • Season the sauce with 1/2 tsp salt, fresh thyme and 1 stock cube.
  • Mix well to combine.
  • Cover the pan and cook for 2 minutes.
  • While the sauce is cooking, crack the eggs into a bowl.
  • Whisk well to mix the egg yolks with the egg white.
  • Check the sauce, mix it well to ensure that it is not stuck to the pan.
  • Pour the eggs into it.
  • Turn the heat of the cooker down to low.
  • Proceed to stir the eggs into the sauce to ensure that everything combines well.
  • Continue to stir the eggs until coagulates well as can be seen in the video below.
  • Cover the pot and allow the eggs cook for 3 minutes on low heat.
  • Add the chopped bell peppers and stir well to combine properly with the fried eggs.
  • Cook on low heat for 2 minutes.
