how to cook Nigerian corn

There are many ways to cook corn but in this blog post I will share with you an easy peeled corn recipe that everyone likes.

Often times, when people see fresh corn the next time that comes to mind is either boiling it or roasting it.

Interestingly these cooking methods are equally delicious but come along as I share with you how to cook Nigerian corn with the ingredients below.

Ingredients for corn jollof

  • 6 raw corn
  • 1/2 yellow bell pepper
  • 1/2 red bell pepper
  • 1/2 green bell pepper
  • 1/4 scotch bonnet pepper
  • 1/2 orange bell pepper
  • 1/4 cup cooking oil
  • 1 handful ugwu leaves
  • 1/2 onion
  • Deboned mackerel fish
  • 1 teaspoon salt
  • 1/2 tablespoon curry powder
  • 1/2 tablespoon mixed herbs
  • 1 seasoning cube

Here is a recipe on how to boil fish as well as an easy way to debone fish. I used the recipe for my deboned mackerel fish and it came out very well.

Without delay, I will proceed to share my sweet corn jollof recipe with you.

How to cook corn the Nigerian way

  • Peel off the corn husk to reveal the corn on the cob
  • Wash the corn under running water
  • Get a sharp knife and a bowl
  • With the knife, peel the corn by cutting it off the cob
  • Set the corn aside
  • Cut the onions and bell peppers to your desired sizes
  • Place a pan on the cooker
  • Add 1/4 cup cooking oil and allow to heat up briefly
  • Add the sliced onions
  • Fry the onions for 1 minute
  • Pour the deboned fish into it
  • Mixed well and allow to fry for 1 to 2 minutes
  • Add all the peppers, curry powder, mixed herbs, salt and seasoning cube
  • Stir well, cover the pan and cook for 2 minutes
  • After 2 minutes, scoop out the fish sauce into a bowl
  • Pour the corn into the pan
  • Add little water about 1 cup of water
  • Cook corn for 10 minutes on medium heat
  • After 10 minutes open the pan and add the fish sauce
  • Also add the sliced ugwu leaves
  • Stir well to combine
  • Add 1/4 cup of water
  • Cook for 5 minutes on medium heat

To this end, Nigerian corn jollof is ready

To clarify, cooking corn does not require a long cooking time this is the reason why it is important to be cautious about the quantity of water to be added.

Apart from eating corn jollof on its own as a meal, it can also be combined with other foods such as rice, beans and many more.
