This method give a delicious coconut chicken with is is soft and tasty.

How To Cook Chicken & Ingredients For Cooking Chicken
Ensuring that the chicken is well-seasoned and properly cooked is the first step in this recipe.
This is the reason why all the ingredients needed will be listed below.
- 1 kg chicken drumsticks
- 1 tbsp curry powder
- 1/2 tbsp salt
- 1 tbsp thyme
- 2 stock cubes/ 1 tbsp bouillon powder
- 1 medium sized onions
- 3 bay leaves
- 1 tbsp chilli pepper (optional)
- 1/2 tsp nutmeg powder (optional)
- 1 tsp ginger powder (optional)
- 1 tsp garlic powder (optional)
- 1/2 tsp white pepper (optional)
Fresh ginger and garlic can be chopped and used as a substitute to the powdered alternatives.
Now let’s proceed to how to season chicken drumsticks with the ingredients above to make a really tasty meal.
How To Cook Chicken
This is a step-by-step guide on how to cook chicken drumsticks for this coconut chicken recipe.
- First put all the chicken in a bowl of water
- Scrap off the hairs and dead skin with a small kitchen knife.
- Transfer cleaned chicken into a pot
- Peel off the skin of onions and slice it into the pot.
- Add curry powder, thyme, salt, bay leaves, nutmeg, ginger, garlic, stock cubes, chilli pepper and white pepper.
- Add 2 cups water and mix well.
- Cook for 30 minutes
- Turn off the heat
- Scoop the cooked chicken into a colander or sieve to remove excess liquid – save the chicken broth for later
- Preheat oven on 180 for 10minutes
- Cover the inside of the oven tray with baking paper
- Arrange the drumstick on the tray
- Put in the oven and roast for 15mins
- Turn the chicken to the other side and bake for 15 minutes more.
Now chicken drumsticks are ready to be made into chicken coconut milk.
Coconut Chicken Recipe & Ingredients
After the chicken is cooked and ready, it is time to proceed with making the roasted chicken into authentic Nigerian chicken in coconut milk.
- Roasted chicken
- 1 red bell pepper
- 1 green bell pepper
- 1 medium size onion
- 2 cans coconut milk
- 2 tbsps. chilli pepper paste
- 2 tbsps. cooking oil
- 2 bay leaves
- 1 tsp curry
- 1 stock cube
- 1/2 tbsp salt
- 1 bay leaf
- 1 tsp thyme
- 1 cup chicken stock
Full fat coconut milk is my favourite for a creamy texture, but the low fat option can also be used.
How To Make Chicken In Coconut Milk
Start by peeling off the onion skin and also removing the green stalk and seeds in the bell peppers.
- Clean the onion and bell peppers, then slice
- Heat up 2 tbsps. cooking oil
- Stir fry onions in the hot oil for 2 minutes
- Add bell peppers and stir fry for 2 minutes
- Season with salt, stock cubes, curry, thyme, and bay leaf
- Fry for 3 minutes
- Add coconut milk, chicken stock and chilli pepper paste
- Mix well to combine all the ingredients
- Now add roasted chicken
- Cover the pot and allow to cook for 10 minutes.
- Remove the chicken from the coconut sauce.
Chicken in coconut milk is ready to be paired with any food of your choice.

How to make veggies chicken coconut rice & Ingredients
After preparing chicken in coconut milk, the efficient way to utilise the left over coconut milk sauce is by using it to prepare simple chicken coconut rice with veggies.
For this, you need the following ingredients.
Veggies & Chicken coconut rice ingredients
- 3 cups basmati rice
- Leftover coconut chicken sauce
- 1/2 – 1 tbsp salt
- 3 stock cubes
- 1 cup diced carrot
- 1/2 cup green peas
- 1/2 cup green beans
- 1 cup broccoli
- 1 1/2 cup diced chicken
- 1/2 cup Brussel sprouts
Good news !!! We have come this far because you decided to trust the process and at this point, preparing coconut rice is simple.
How To Make Veggies & Chicken Coconut Rice
With the bulk of the preparation process already completed, only few steps are need to cook this coconut rice.
- Wash rice multiple times
- Pour the washed rice into the pot of coconut milk sauce used for preparing the chicken in coconut milk.
- Add salt, chilli pepper paste, stock cubes, and diced chicken.
- Add 1 1/2 cups water
- Mix well to combine
- Cover the pot with baking paper or aluminium foil and place the pot cover on it – This is done to keep the heat in and so the rice can cook well with small water quantity.
- Open the pot after 20 minutes of cooking on medium heat.
- Add carrots, broccoli, green peas and green beans
- Once again, cover the pot with baking paper and the pot lid
- Reduce the cooking temperature to low heat
- Steam for 6 minutes
- Mix well to combine

Coconut rice is ready.
