
If you eat this unconventional Nigerian fried rice cooked with Nigerian short grain rice, your taste buds will thank you for it and I will be pairing it with fried fish in pepper sauce.

With this fried rice recipe, I will show you that you can cook delicious, visibly attractive Nigerian fried rice with Nigerian short grain rice. Contrary to the general belief that;
- fried rice should be cooked with long grain rice
- fried rice is not tasty if it is not cooked with chicken, turkey or meat broth
- If diced liver is not added, fried rice ingredients is not complete
- Nigerian fried rice can not be visible attractive unless you use food coloring
Hey I did not follow any of the above-mention guidelines or add any of those ingredients and my fried rice tastes amazing. You will only understand what i mean when you try his amazing recipe.
Without much ado, here are the ingredients used for this Nigerian Fried rice recipe.
INGREDIENTS
- 3 cups of Nigerian short grain rice
- a handful of green peas
- 7 carrots
- Spring onions
- 4 green peppers
- 6 cuts of mackerel fishes (popularly called Titus fish in Nigerian markets)
- 1⅓ cups of vegetable oil
- 2 tablespoons salt
- 4 seasoning cubes
- 2 medium-sized white onions
- 1 tin of sardines
- 2 eggs
- 5 tablespoons tumeric powder
- 2 tablespoons curry powder
- 2 tablespoons thyme
- 1 tablespoon white pepper
- 1 cup runner beans
- 10 tomatoes
- 3 red bell peppers (commonly called tatashe in nigeria)
- 5 Scotch bonnet pepper (also known as ata rodo)
- 4 cayenne pepper ( shombo)
- 6½Water
COOKING TIME – 1HOUR 30MINUTES
- Wash all the vegetables separately in clean water i.e carrots, green peas,spring onions, green peppers, runner beans and onions.
- Dice the spring onions and white onions separately
- Scrape the back of the carrots and dice it too
- Cut open the green peppers, remove the seeds and also dice it
- Wash the mackerel fish at least twice in clean water by removing the gut, blood clot and intestines
- Put the cleaned fishes in a basket to drain out the water
- Wash the rice twice in clean water and drain the water
- Rinse the tomatoes, bell peppers, scotch bonnet peppers and cayenne peppers
- Blend to a smooth consistency
FRIED MACKEREL FISH IN PEPPER SAUCE PREPARATION
- Pour ½ tablespoon of salt on the cleaned fishes
- Toss the fishes up severally to evenly spread the salt and set it aside
- Pour vegetable oil into frying pan on high heat
- Allow the oil heat up
- Put salted mackerel fishes in hot oil
- Fry both sides of the fishes until it is slightly golden brown
- Remove the fried fishes from the hot oil and set it aside
- Reduce the hot oil by half and set the other half aside
- Pour sliced white onions in to hot oil
- Let it fry for 2 minutes
- Add sliced green peppers fry for 2 minutes
- Add the blended tomatoes and pepper mix
- Add ¼tablespoon of salt, 1 seasoning cube, 1 teaspoon curry powder, ! teaspoon thyme.
- MIx well
- Put in the fried fishes and gently mix to ensure the fishes are coated with the sauce
- Leave the frying pan lid open and fry for 5-7 minutes
FRIED MACKEREL FISH IN PEPPER SAUCE IS READY.

HOW TO COOK NIGERIAN FRIED RICE RECIPE USING NIGERIAN SHORT GRAIN RICE
- Add 2 tablespoons of vegetable oil in a pot
- Crack 2 raw eggs into the hot oil
- Stir fry the eggs until they are properly fried
- Scoop out the stir fried eggs into a bowl and set aside
- Pour the remaining oil used for frying the fishes into the pot on high heat
- When the oil is hot enough, add diced spring onions, white onions, green peppers, carrots, green peas, runner beans and sardines
- Stir it well
- Add 5 tablespoons turmeric, curry powder, thyme, white pepper, salt
- Also add 3 cubes of seasoning cubes
- Mix well and cook for 5 minutes
- After 5 minutes, add water
- Stir well and allow it boil
- When it starts boiling, add rice and cook for 3o minutes or till rice is soft to your preference
- Add the stir fried eggs and mix well
DELICIOUS NIGERIAN FRIED RICE COOKED WITH SARDINES AND EGGS IS READY.
