
Amazing foodie, in this recipe I’m going to show you how to make creamy tapioca with coconut and raisins. The combination of coconut milk, sweet raisins and creamy tapioca is absolutely delicious.

Tapioca is a Nigerian traditional cassava based food that can be eaten as a simple meal at any time of the day.
Cassava is known to contains cyanogenic properties, so to produce tapioca, cassava is processed by skilled people to make it healthy to eat.
After processing, tapioca is sold in the market in its dried form as shown in the image below.

Now I’ll proceed to list the ingredients needed and take you through the recipe so you can easily make it at home.
Ingredients for tapioca
- 250g tapioca
- 1 coconut
- 1/2 cup raisins
- 1/2 evaporated milk
- 2-4 tbsp sugar
How to cook tapioca
- Pour tapioca in a big bowl and add enough water to cover it
- Allow it to soak overnight
Then on the next day when tapioca is well soaked

- Crack open coconut to remove the coconut water
- Remove the white coconut fresh with a knife
- Transfer coconut fresh into a blender jug
- Add 1-2 cups water and blend
- Place a fine mesh seive on a big bowl
- Pour blended coconut into the sieve
- Allow the coconut milk drain to separate the chaff from the coconut milk
- Transfer the coconut milk into a pot
- Add 1-2 cups of water – the water quantity depends on the thickness to be achieved
- Add sugar, raisins and softened tapioca -(you can also add some coconut chaff for more texture – optional)
- Cook for 25 minutes while mixing occasionally to stop it from getting stuck to the bottom of the pot.
- Turn down heat and allow the pudding cool down
- Serve warm or cold
- Add more evaporated milk for a creamy taste

- You can also add more sugar and raisins to your preference.
- Mix together to combine well
- Enjoy!

The coconut milk gives this tapioca a creamy texture and delicious flavour and very bite of this tapioca is packed with the lovely flavour of coconut with sweet raisins.
