What is ogbono soup?

This delicacy is called ‘Obe Apon’ in Yoruba language but the general name for this draw soup. This draw soup usually contains an assortment of different types of proteins such as beef, fish, chicken, goat meat, stock fish and many more.

So, there are different names for ogbono seeds such as mbukpap uyo, bush mango or dika and I would share with you a picture of what Ogbono seeds look like as well as how it is processed to achieve the product with which ogbono soup is cooked.

Ogbono soup ingredients

  • Palm oil
  • Ogbono seeds
  • Cameroon pepper
  • Horse mackerel fish
  • Chicken (cooked)
  • Chicken stock
  • Crayfish powder
  • Spinach leaves
  • Seasoning cubes
  • Salt
  • Water

How to cook Ogbono soup

  • Clean your chicken
  • Then use the steps and ingredients here to prepare the cleaned chicken.
  • After cooking the chicken with the steps outlined in the referred blog post, set aside
  • Cut the fishes into you preferred sizes and number
  • Clean the fishes properly with water – ensure that the fins, gills and insides of al the fishes are properly cleaned.
  • With a dry mill, blend the ogbono seeds to powder
  • You can also buy freshly blended ogbono powder here
  • Measure ½ cup of the blended ogbono into a small bowl
  • Add 120ml of palm oil into the bowl of ogbono
  • Mix well till you get a silky texture and set aside
  • Clean the spinach leaves well with water
  • Cut the vegetable into chucks and set aside
  • Set your cooker to medium heat
  • Add 4 cups of water into a pot
  • Put the cleaned fishes into water
  • Season with 4 tbsp of crayfish powder, 1 seasoning cube, 1 tsp salt, 1tbp Cameroon pepper
  • Mix well and cook for 5-10 minutes on medium heat
  • After 10 minutes, remove the fishes and set aside.
  • Add the boiled chicken and stock from the cooked chicken chicken to the pot
  • Stir, cover and allow to boil for 5-6 minutes
  • Put the ogbono and palm oil paste in the hot mixture
  • Ensure the ogbono paste dissolves well
  • Mix and cook for 1-2 minute to ascertain the thickness of the soup
  • Add more water and mix well till the desire sliminess and texture is achieved – to see the suggested texture, watch the video recipe attached to this blog post.
  • When the perfect consistency has been achieved, add 1-2 seasoning cubes, ½ tsp salt to the soup
  • Stir well and cook for 3-5 minutes on medium heat
  • Then add the spinach, mix well and add the boiled fish
  • Allow to cook for 2-3 minutes
