Ingredients
- 1kg red peanuts
- 3 spoonfuls salt
- 6-7 cups water

How to roast red peanuts at home
- First remove dirt and unwated peanuts
- Place a big pot on the cooker
- Add water, the cover the pot with the lid and allow the water boil
- Once the water starts boiling, transfer the pot to a hard flat surface
- Add 3 spoonful salt and mix well till the salt completely dissolves in the water
- Pour the raw red peanuts into the hot water
- Mix well, cover the pot with the lid so that the peanuts can cook
- Allow peanuts cook for 15 minutes
- Place a colander in a big bowl
- Pour everything into the colander to separate the peanuts from the water used for cooking them
- Put the soft cooked peanuts aside
- Then dispose the water used for cooking them
- Spread the wet peanuts in trays ensuring that the trays are not over-crowded
- Put the trays in the sun for 3-4 hours so that the peanuts can dry
The total number of hours for drying the peanuts depends on how hot the sun is as well as how big the peanuts are.
- After drying the peanuts, take them back to your kitchen, let’s start roasting
- Preheat your oven at 150 degrees for 20 minutes
- Arrange the trays in the oven and roast for 20 minutes
- Check the peanuts after 20 minutes and mix them with hand but if it is too hot for you, use a spoon
- Continue roasting for 10 minutes or until the back peels off easily
- Remove some peanuts from each tray and put on your table
- Allow that small portion to cool down completely
- Then taste the separately to know the differentiate the tray with the crispy peanuts from the ones that need more time roasting.
- Remove trays with well roasted peanuts and allow it to cool down completely
- While you allow the ones not yet well roasted to continue roasting
- After all have been roasted, it is time to peel the skin
- To remove the skin, scoop a handful and gently rub them together with your palm
- Take the tray outside and blow away the back.
